Churro Waffles With Dulce De Leche Drizzle

And just like that, the warm and fuzzy feelings of the holidays have started to fade away. We are getting back into the routine of work and school and I find myself already missing those days spent in pajamas and binging on Hallmark movies.

Another thing I'm missing? Those indulgent meals and sweets. My sugar consumption increases three fold over Christmas - but that's what the holidays are about!

Today I wanted to share a new-to-me recipe that I enjoyed quite a few times over the past few weeks. It puts a fun spin on a breakfast staple. If you want to make your weekend breakfast a little more special, you'll want to give this Churro Waffles with Dulce De Leche a try!

Churro Waffles Recipe 

I've adapted this recipe from Half Baked Harvest's Churro Waffles recipe. Are you familiar with Tieghan and her amazing site? She is a new follow but I have quickly become obsessed with everything she cooks up. 

I discovered her when I bought the Half Baked Harvest Super Simple cookbook as a Christmas gift for my sister. I flipped through the cookbook and had to order one for myself too. The book lives up to its promise - the recipes are simple, quick, and use easily available ingredients. 

Tieghan has a way of taking seemingly difficult and intimidating recipes and breaking them down to the basics. She's clever and her recipes leave me thinking "I can do that!". This Balsalmic Mushroom Chicken Marsala is next on my list to try.

But back to those waffles.

Have you ever had churros? A churro is a long fried dough pastry coated in cinnamon sugar. Churros come plain or with a chocolate or caramel filling for a crispy on the outside, soft and gooey on the inside, delight. 

I never hesitate to buy a churro when I see them at Mexican food trucks or summer fairs. The are just the right amount of sweetness and are easy to hold in your hand.

This recipe brings the crunchy fun of churros to your breakfast table. You can customize the toppings to suit your taste though going old school with just a drizzle of maple syrup is good too. 

What toppings can you put on churro waffles? 

  • chocolate sauce (here's a quick homemade chocolate sauce recipe)
  • caramel sauce
  • dulce de leche (heat in the microwave for a few seconds to get to a drippy consistency)
  • maple syrup
  • whipped cream
  • yogurt
  • berries (strawberries, blueberries, raspberries)
  • sliced banana
  • nutella (heat in the microwave for a few seconds to get to a drippy consistency)
  • ice cream (great for dessert!)

We opted for berries with homemade whipped cream and a dulce de leche drizzle. Two things really made this recipe special: 
  • buttermilk. We tended to use plain milk in our waffle batters, but buttermilk really does add flavour and fluffiness to the recipe.
  • cinnamon coating. Brushing the waffle with butter and then coating it with cinnamon sugar really takes this recipe over the top. I've displayed the waffle quarters in a stack and you get a satisfying crunch as you cut through the layers with your knife

Churro Waffles with Dulce De Leche


Ingredients:

For the waffles:
  • 2 cups buttermilk (shake it first in the container before you measure)
  • 3 eggs
  • 6 tablespoons unsalted butter melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon brown sugar
  • 2 cups all purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoons salt
For the cinnamon sugar coating:
  • 4 tablespoons butter melted
  • 1/2 cup sugar
  • 1 tablespoon cinnamon
  • 3 tablespoon Dulce de Leche sauce for topping (this is our favourite brand)

Instructions:

  1. Preheat your waffle iron.
  2. In a large mixing bowl, whisk together the buttermilk, eggs, melted butter, vanilla extract, and brown sugar. 
  3. Add the flour, baking powder, baking soda, and salt. Stir until just combined. Let the batter sit for five minutes.
  4. Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter in the center of the waffle iron to lightly cover the surface, about 1/3 to 3/4 cup. Note that the batter will spread as it cooks so take that into consideration. Close the iron and cook until the waffles are a light golden brown and slightly crisp.
  5. In a shallow bowl, combine the cinnamon and sugar. Brush each warm waffle on both sides with the melted butter. Dip the waffle in the cinnamon sugar.
  6. Melt the dulce de leche in a microwave safe dish for 15 seconds. Drizzle on top of the waffles. Add your other toppings and enjoy!
